Banana Bread of Doom

I love the smell of bananas.
There was this shampoo I once used, I can’t remember the brand and I wish I could, but I loved the smell. It was tropical, fruity smelling, familiar and I couldn’t quite put my finger on exactly what it was. Then one day it hit me. Bananas. The shampoo smelt like bananas and I loved it.

No longer having that shampoo, I still love the smell of bananas–especially when they’re baking. Walking into the kitchen and taking a big whiff of that intoxicating scent makes me go crazy. I feel like I can take on the world, finish writing my book, complete all the projects in my creative queue, install a new patio in my backyard complete with all new landscaping, read every book on my “to-read” list, run a marathon, all this and more while racing around my kitchen dancing to Queen’s “Don’t Stop Me Now”. I am just so energized. And that’s exactly what happened when I was baking this bread.

This isn’t your usual banana bread either. Oh no, this happens to have some lovely bourbon in it giving it an exquisite taste. The only thing I would do differently next time I make this is to add nuts in it to give it a bit of a crunch.

Ingredients

4 Ripe Bananas, smashed
1/3 Cup Melted Butter
1 TBS Bourbon
1 Egg, beaten
1 tsp Vanilla
1 Cup Brown Sugar
1 1/2 Cup of Flour
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Nutmeg
Pinch of Salt
Pinch of Ground Cloves


Instructions

Preheat oven to 350 and grease a 4 x 8 loaf pan
Mix bananas and butter in a large bowl
Then mix in egg, sugar, vanilla, bourbon, spices and baking soda
Add flour and mix
Transfer to pan and bake for 50 minutes to an hour
