Watermelon Lime Slush

Watermelon Lime Slush - In a jar next to limes and watermelons

I know, I know, it’s fall–but I couldn’t resist.

This is a super simple and refreshing drink to make with very few ingredients. If you’re missing summer and can find watermelons, you just found your summer in a glass.
Hubby surprised me with a Vitamix for an early anniversary present and I was just ecstatic. I’ve been playing around with different recipes and am pleased with the versatility of the blender. Soups, drinks, ice cream, salad dressings, etc. It’s an easy cleanup all prepared in a small section of your kitchen.

Though I made this with a Vitamix, you can definitely make this with a good blender–a ninja or magic bullet will work just fine 🙂

Description

Ingredients

  • 1 cup Watermelon, chopped into 1” pieces
  • 1 Lime, Squeezed
  • 2–3 Mint leaves
  • 5 Ice Cubes

Instructions

  1. Combine watermelon, lime juice, mint leaves, and ice cubes in blender.
  2. Blend on low and slowly work your way up to high to ensure ice is completely broken down.
  3. Enjoy!
