100 Days of Cookbooks: Gizzard Confit

What a day! I’m not sure if I have a terrible headache, sinus issues, problems with a tooth implant, or maybe I’m even developing allergies, but man, I feel terrible. It’s been like this for a lot of this week, but today has been particularly bad. I almost called my dentist to make an appointment and scratch that possibility off the list, but I didn’t. If it continues, I’m going to have to.

Thanks for listening to my whine. Let’s move on to something a little more interesting.

It’s almost the weekend and that means Mother’s Day! What are you doing for Mother’s Day? I’m not positive what we will be doing yet, but I’m sure it will be a lot of fun. Perhaps we’ll have crab for dinner! I need to figure out this weekend’s list of recipes to try. I’m pretty excited to see where we will experience next!

Gizzard Confit from Nom Nom Paleo

Okay, here’s a shocker. This was really, really good. They don’t look pretty, but they’re little bites of goodness.

I’m not an offal person (haha I’m so punny). I really don’t like the texture. It’s so chewy or stringy, bleh. This recipe here, the gizzards were soft and reminded me of good tasting chicken thighs.

I sent Chris a text say, “As long as I don’t look at them, these taste GREAT!”

Honest, they were really tasty.

Basically, you salt them overnight, then braise them in duck fat for two hours. They were so soft you guys. It even smelt like Thanksgiving while they were cooking. I was really hesitant about making this because of my dislike of offal. But I really encourage you to try this.

Chris likes to eat his with rice, in a sandwich, or in a salad and my mom likes eating them just as they are.
