100 Days of Cookbooks: Smoked Salmond Sweet Potato Scramble

One of the things I don’t adventure out in, but should, is breakfast. I don’t know why to be honest. Do I enjoy breakfast? Yes, but not as much as I love dinner and lunch. Why don’t I work on brunch then? Good question, I have no answer.

Maybe I’ll start forcing myself to make a bunch of breakfast foods and just find the ones that really tug at my heartstrings. I have a Bobby Flay Brunch book that I need to work through. I’m sure it’s loaded with a ton of delicious dishes waiting to be discovered. This of course has to wait till Whole30 is done (I’m sure you guys are tired of me talking about it now).

So let’s go visit this safe breakfast dish!

Smoked Salmon and Sweet Potato Scramble from Meals Made Simple (17/100)

Okay, why didn’t anyone tell me how good sweet potatoes tasted in a scramble? I am 100% serious. It makes sense if you think about it. You can have a sweet potato hash you put under your eggs…but inside them–whole new territory. I almost want to start throwing random ingredients into my eggs just to see what other amazing things go great inside.

Super easy to make, super delicious, and nice looking, I would make this dish at a brunch for sure. It was really, really good.

I’d also like to take a moment and talk about how this is a scramble and not an omelet. Scrambles are awesome. I think I actually talked about it before on the blog. I prefer scrambles so much more than omelets. Texture is everything.

So try this one! You won’t be disappointed!
