Had dinner at my friend’s house the other day and we all ended up bringing some sort of corn dish without knowing ;p One of the dishes she had prepared was a cheese corn dip. Amazing. So I grabbed the recipe from her and provided it to you!
Cheesy Corn Dip
1 Cup of Montery Jack Cheese
2 Cups of Chedder Cheese
2 TBS Adobo Style Chilies with sauce
1 4 oz. Can of Green Chilies, diced
1 Can of Corn
1/2 Cup of Mayonnaise (I love the Trader Joe brand)
1/2 tsp of Garlic Powder (or a little more if you like garlic like me)
Tomato, Green Onion and Cilantro for topping
Preheat oven to 350.
Mix everything but the toppings into an 8 x 8 dish and bake for about 20-25 minutes until bubbling.
Sprinkle on toppings.
