100 Days of Cookbooks: Roasted Plum Tomatoes with Garlic

This Roasted Plum Tomatoes with Garlic from Lisa Caponigri’s Whatever Happened to Sunday Dinner? screams of fresh flavors and family time around a dinner table. It truly is one of the dishes that rely on the flavors of few ingredients and fresh produce, making a big impact on your taste buds.

Can we just say yum?

Remember when I said you absolutely must have some favorite dip recipes under your belt in case of unexpected visitors? Well this isn’t a dip exactly, but it MUST be added to your repertoire. It is insanely easy, can be thrown together real fast, and crazy delicious. Crazy delicious. I’m not joking. My husband hates tomatoes and he couldn’t stop eating this. While I was taking photos of another dish, he ate 75% of this by the time I finished. I wasn’t gone that long.

Lisa Caponigri’s book has become one of my all time favorite cookbooks. The whole book focuses on things I feel very strongly about—quality time together, celebrating life, and enjoying good food. The recipes are great too. Every time I look at this book, there’s something I want to make. She breaks it down into weeks, so if you want a glorious, weekly Sunday meal planned out, she has you covered.

I also have this love for Italian food and the large family dinners Italians have. This book makes me feel like I can have a small part of that…even if I’m not from an Italian family…and I’m probably romanticize the idea…and my Italian friends say that with large family dinners there’s large family drama… but shhhhhh. Just go with it and let me live in my crazy fantasy.

ANYWAY…

Give this recipe a try; it’s an absolute must! In fact, this is the first recipe I’m giving a rating of 5 to!
